American Chestnut: 1922 Starkey House, a Finger Lakes Bed & Breakfast is Adorned With Original Woods

The Arts & Crafts period of architecture in America often called for woodworking in the form of panels, doors, moldings and floors that were created using the, now extinct American Chestnut tree.

When I first stepped into the house almost thirteen years ago, I fell in love with the color, sheen, and richness of the the original Chestnut wood used throughout as the perfect finish to the philosophy of that era; simple, natural, functional beauty. The untouched, vintage setting was probably one of the reasons I decided to make the house mine.

The trim moldings that were cut and fitted on site, were as beautiful as they day they were installed. I can picture the busy carpenters using the tools of the craft with perfect precision as they completed every detail fitting around beveled glass and framing of the stained glass windows and doors.

My eyes raced back and forth in amazement first at the built-in bookcases between the dining room and living room.

Then, to the French doors in the main hall, the stairway and finally, to the panels and plate rails in the dining room. Corner moldings were used as final appointments even on the third floor.

The history of the great American Chestnut is an interesting one. The fact that its wood and fruit provided for and sustained the American people with a variety of uses from early on, up to its demise during the later 1930's.

"The fruit that fell to the ground was an important cash crop. Families raked up chestnuts by the bushels and took wagon loads of them to sell in nearby towns. The people even cooked the chestnuts for their own use. The bark and wood were rich in tannic acid which provided tannins for use in the tanning of leather. More than half of the vegetable tannin used by the American leather industry at the turn of the century came from the American Chestnut." taken from www.acf.org

It is sad to know that a blight hit and destroyed this variety of Chestnut tree from the early 1900's to around the 1930's from eastern Canada down the coast to the Carolinas. There is a society and movement to revive and restore the growth of the American Chestnut.

I am happy to be the keeper of the beautiful Chestnut wood left by those who worked so artistically and carefully during the last century, to impart its natural beauty here at 1922 Starkey House. I thank all of the owner-keepers before me for preserving it and not painting over it.

As I read through this past year's posts I can see how the beginnings of my dream project, 1922 Starkey House Bed & Breakfast Inn have come to life and have turned into a successful reality.

I began writing about everything that interests me and everything I am passionate about last January 2011. With the encouragement of my daughter, Rachael, who writes her own successful blog about integrative health, I embraced all that was welling up inside and began to express every idea, thought and plan. "Just begin . . . start somewhere . . . write about what you know about and love . . .the rest will follow."

Overall, I see that my post topics were sort of all over the place but then, there were so many things I wanted to investigate and write about and I feel there are still, hundreds, maybe thousands more. I guess you could say that I write for the moment and what is meaningful to me at that time. I also wish to connect everything that is good to readers of my pages with the experiences that visitors to my house have when they are here; when they relax and get comfortable, eat my freshly prepared, healthy breakfasts, learn about architecture and the history of the house, enjoy Seneca Lake views, and take in all the area has to offer

Today, I am celebrating 9,000 page visits for my creative piece, "Passionate in the Finger Lakes." That is a lot of pages for my small spot in blog readers' world compared to other, more developed writings that are written in a more topic-specific style. Although I write about specific topics, I tend to blend them and connect them to each other and to my guests. I continue to be just as excited to greet every new guest today, as I was greeting my first guests last summer.

As things grow and new ideas evolve, so to does my enthusiasm to continue to find new ideas to write about. The Finger Lakes Region is growing rapidly with new businesses springing up all over. Although I spent much of my adult life living away from here, reality is that I was born and raised here.

I remember what my childhood was like on the farm. I have flashbacks of the days of picking berries in the summer and grapes in the fall to earn a little teen spending money. When I returned, it was with a new perspective. As I pass by the many, beautifully developed vineyards and world-class tasting rooms that offer some of the finest wines I search my mind's eye to remember what everything use to be like here.

Thanks to all of my readers. This year's postings should bring a greater assortment of topics, everything from my garden (I planted one hundred-fifty tulips and daffodils last fall) to fresh local food menus. I can't wait for the produce auctions to begin again!

The Perfect Silence of Snow: A Finger Lakes Post From the Past

There is something spiritual and peaceful about freshly fallen snow the presence of which can be so simple yet so overwhelming. I love the silence and the look of undisturbed snow covered grounds. They always seem to say, "Don't walk in me or touch me unless you have a good reason...like to play or build a snowman."

When I was a child growing up on a farm located between Seneca and Keuka Lakes, here in upstate New York, I witnessed many a heavy winter snowfall. I was always intrigued by the forms, shapes, and hues it would create as it covered everything in sight.

My imagination would lead me to remember the flowers of the previous summer in full bloom. I would look around and identify each spot where the Tulip and Daffodil bulbs were sleeping comfortably and dormant waiting to raise their pretty heads when the Spring thaw became evident. I would glance up at our acres of fields and woods, and remember my walks with my father or brothers during the warmer months. I could see the rolling green alfalfa, the rambling little creek down the lane and the trees in the hedgerows, and the pond. Everything is blanketed during the winter...just taking a rest and getting ready to pop with life in just a couple of months, hopefully.

Spring always comes and the country comes alive again. It will get busy here, around the lakes. Birds will build their nests, buds will blossom, and visitors will come to taste wine and cheese or have fun at the numerous regional farm and cultural festivals. Cottages will be opened by those looking forward to swimming, boating, kayaking and fishing. Those seeking a Finger Lakes getaway will begin to arrive.

I am waiting patiently... but for now, I am appreciating the silence and beauty that the good Lord has provided.

All of my hiking and biking guests have declared my dishes to be tasty, filling, and long-lasting, containing all the stuff necessary for the energy they need for their excursions.

The art of making stained glass windows, lamps, and other artifacts dates back in history. Light capturing color is beautiful to the eye and brings a special need for interpretation by the viewer. The assortment, depths of color, clarity, and arrangement used by the artisan creates one-of-a kind perfection. Even when patterns are created, the natural variations within the glass itself disallows perfect repetition.

Stained glass windows were almost always included in the design of the "Arts and Crafts" period architecture which originated in England during the 1860's and moved to America during the late 1800's to around the early 1930's. The design preference is also referred to as "Mission-style" which might refer to the many homes and churches built in the Southwest United States, such as New Mexico and southern California.

The style is becoming once again popular and original homes are sought out. Those that were sturdily built with local woods and designed using livable floor plans, simple lines, and provided functional built-ins with hand-crafted appointments. Historic 1922 Starkey House still features many original architectural appointments such as vintage light fixtures manufactured by the Miller Lighting Company of Meriden CT.

These fixtures were designed to be powered by electricity, but those before were kerosene oil lamps. Although I replaced some of the fixtures according to decor and safety requirements you will still see and use the many wall sconces, chandeliers, and pendant-style lights that were original to the house when it was built in the early 1920's.

Hand-painted glass domes and shades on hanging pendant lights as well as wall sconces were very popular. These lights are still hanging at the house and can be enjoyed in the Sycamore and Catalpa rooms, as well as in Robin's Nest. The delicate details are virtually undisturbed.

The richness of color and aged hues capture your eye. I am interested to find out more about the patterns and color choices. Any artifact that was hand-painted by artisans from so long ago intrigues me.

Ceiling fixtures from the Edward Miller Lighting Company at 1922 Starkey House remain in the upstairs hallway and the third floor loft area. This photo shows the brass and perfect condition of the details that this manufacturer was noted for during that time.

I am interested to know more about these fixtures. I do know that the Miller Company sold some or all of its business to the Rochester Lighting Company here NY which is probably where they were purchased from by C.Raymond Brewer, the original owner of this grand house in 1922.

Passionate About the Erie Canal and Seneca Lake History

1922 Starkey House Bed & Breakfast Inn is located conveniently along Seneca Lake with access to the historic New York State waterways. My guests are always asking for more excursion ideas when they are staying here for a few days, so I thought I would post about destinations and historic venues located within a short jaunt from the house, around the lakes and waterways.

The history of the central New York State waterways goes back to the Erie Canal built over a 363 mile area of land across the state beginning in 1817. Known as "Clinton's Ditch" after the DeWitt Clinton, Governor of N.Y. at the time, the original canal was completed in 1825.

The canal was expanded, widened, and deepened numerous times, according to the demands of travelers and businesses needing the waterways for the transporting of goods. The region prospered as a result of this grand project that was to be considered to be one of the largest canal projects of all time. History was created and documented by all as they utilized the canal and its expansions, such as the Barge Canal, still functional today.

Passionate stories were written about the Erie Canal's sights and sounds in travel journals by those visiting the region or in shipping logs by those working on the canal waterways transporting goods and natural resources from Buffalo to Seneca Lake and as far as Albany, and then to New York City via the Hudson River.

The waterways can still be seen and toured in a number of ways. They provide an unusually interesting day excursion for those visiting the Finger Lakes Region. Happy Thanksgiving. . .1922 Starkey House Serving Hot Apple Pie!

As I returned from a lovely Thanksgiving time with my daughter and her family I spotted a box of freshly harvested apples that I had left on my kitchen table. I bought them from local orchards here in the Finger Lakes region along Seneca Lake with the intent of preparing them deliciously in as many ways possible!

I have plans for a yummy apple cranberry pie using a recipe I found on the Internet that is easy. I usually do not peel my apples though as they do in the recipe. It is just a personal choice.

I am grateful for the supply of local fruits and vegetables here in the country. In reality, it is one of the reasons to be passionate about living in the lakes region. It is one of the main contributors to "living the healthy life."

I was born and raised on a farm about nine miles from 1922 Starkey House near the little hamlet of Altay back in the 1950's. As children, my brother Bill and I certainly knew what it was like tending to the very large family vegetable garden during summers off from school.

Growing and preserving food was part of our lives. We did not always appreciate the experience at the time but considered it work sometimes. We did the planting with our father Frank.

Bill and I did some tilling and weeding. Then, we picked, cleaned and sometimes chopped a variety of vegetables like corn on the cob, green beans, potatoes, onions, and tomatoes. Mom would then either freeze them or can them to last us through the next winter. I look back at those days and now realize that gardening is truly in my nature and I am grateful for all that we learned.

I have begun the process of saving or preserving food again, by freezing fruits and a few veggies from the summer such as blueberries and raspberries, beets, corn and broccoli, that I picked up at the Finger Lakes Produce Auction.

The regional strawberry crops were lost to excessive rain this past season. Hopefully next year will make up for it. There is nothing like fresh strawberry European style crepes! Crepes are my signature dish at 1922 Starkey House but I love to use a variety of fruits with them like peaches, blueberries, and raspberries. Strawberry freezer jam is a must at every breakfast table.

I have plans to plant and keep my own garden this next spring also but life here at Starkey House is busy as an Innkeeper taking care of most everything!
My wonderful Mennonite friends will keep me in good supply at their farm stands to provide what I cannot get otherwise.

I really enjoy preparing many variations of omelets for my guests when they visit here along Seneca Lake in the Finger Lakes Region of upstate New York.

Pictured above is an omelet I served my guests this morning made with grape tomatoes that I purchased at the Finger Lakes Produce Auction at the end of the summer. They are a beautiful combination of chopped ham, minced sweet red onion, the tomatoes, and grated cheddar cheese. I like to use a sharp cheddar but of course, you can choose any other that suits your taste.

I prepare the grape tomatoes ahead of time. I split them, spread them out, inside up, on a large bake sheet and drizzle them with a little olive oil, a good balsamic vinegar, a grind of sea salt and pepper, then roast them for one hour at 300 degrees.

I then remove them, let them cool and bag them in small (non-freezer) zip lock bags, in small portions. Next, I fill a larger freezer bag with them so that they are protected while freezing, but still individually wrapped all ready for me to take out the desired amount each time based on what I am cooking.

Yes, this is a labor of love but the end result is a delish morsel of tomato flavor. You would think that I added sugar but the natural goodness and sweetness comes out when you roast these little gems. The balsamic adds a little sweetness, too. These can then be used for soups, chopped into omelets, savory breads, or simply spread on a crisp toasted baguette.

Guests find the food and hospitality the best at the Starkey House located just north of Watkins Glen, along the Seneca Lake Wine Trail, in the heart of the Finger Lakes Region.

September and October were especially busy with guests still enjoying all the colorful foliage and waterfalls. The leaves and colors lasted longer probably due to the extra rainfall and the waterfalls were just stunning with downward sprays as well.

I was really happy to host some early November guests and got a chance to prepare some of my self-composed menu choices tuned carefully for the Vegan diet.

I believe that my potato pancake wraps were a hit, stuffed with oven roasted grape tomatoes, garden corn, and other yummy freshly picked goodies found at local Mennonite markets, sorry no picture this time . . (the markets will soon close . . . what will I do?)

Eggs Benedict was a hit as Chef Nick worked his passionate cooking charm on my guests from Canada this weekend!

As my guests waited patiently for their breakfast surprise, I noticed that they looked a little down and dismal. . . sort of like one of the latest "breakfast sandwich" commercials on TV depicting a cloud "not quite up for it." No Wonder! We have had . . . who knows how many . . . days of rain . . .rain. . .and now cold weather. But this group made the best of it! I really enjoyed seeing them trudge through cloudy days to have a fun weekend here in the be-u-t-ful Finger Lakes along Seneca and Keuka Lakes in spite of the weather.

Chef Nick aimed to please and raise their spirits with a lovely breakfast!

My breakfast menu has grown and each specialty has delighted most visitors.

Everything is made by my own hands and from only fresh produce and ingredients. Some dishes can be prepared ahead but mostly the morning of . . .so it is necessary for early risers to communicate that they would like a bun to go, or something of the sort if they need to get out quickly for any particular reason.

What I like about this business is that I can adjust things quickly from one group of guests to another. If anything needs a "tweek" to get things just perfect . . . well, I'm going to find a way.

Most of my guests are not usually in a hurry. They come to this beautiful place called the Finger Lakes Region of upstate New York to relax . . .slow down, and take in all the area has to offer. 1922 Starkey House, being in the country overlooking Seneca Lake, is conducive to a slower pace but its great location is within a short drive from lots of wine trail events, shopping, museums, festivals, boat cruises, and so on.

Since breakfast is at the beginning of the day and one of my most important jobs is to provide a tasty and memorable one, I sometimes have to take a little longer in getting it out. When guests first arrive I will plan their breakfast for the next morning for the time they would like . . . sometime between 7:30 and 9:00 AM.
I do not do buffet style breakfast since that concept thus far, does not go along with my "fresh" philosophy.

A Scrumptious Breakfast Topped Off With a Fresh Peach and Blueberry Yogurt Smoothie

This is a delicious summer treat at breakfast or any time and has been loved by my guests at

1922 Starkey House

Bed & Breakfast Inn.

Peach and Blueberry Yogurt Smoothie

Recipe for 4 servings 1 cup each

1 medium ripe peach, chopped
1/2 cup fresh blueberries (organic if possible)
1 1/2 cups frozen vanilla yogurt
1/2 cup lowfat milk
1 tablespoon local honey -wildflower works the best
1/4 cup crushed ice
Save about 12 quality blueberries and gather two mint sprigs for garnish

Place fruit in a blender, then add frozen yogurt, milk and honey. Blend on slower speed until all ingredients are together, about 30 seconds. Then add crushed ice and blend for another 30 seconds just before serving.

Pour blended smoothie into flutes or other dessert type glasses. Top with the leftover blueberries and mint sprigs. Serve with a dessert spoon and straw.

I was just talking with my lifelong friend, Marsha about how we grew up in this gorgeous area taking its natural beauty for granted. She lived in a house overlooking Seneca Lake. I was raised inland a little in the rural area called Altay, NY between Keuka and Seneca Lakes, near the little lakes of Lamoka and Waneta. I lived in a farmhouse that was in a traditional vintage Americana setting, and she lived in a more modern ranch that had been built by her father, she was and is, always proud to say. I moved away and raised my family in New Jersey and spent some time living in New Orleans, LA. Marsha stayed in the area with her husband James and they raised their daughter together here.

No matter . . . we went to the same school in Dundee where we attended Kindergarten through twelfth grade as all the children did in our area. We picked the berries and grapes as part-time jobs for the farmers in the area. Grapes, raspberries, apples, and cherries have been grown here for over a century.

But, we both agree now after so many years, that we have always loved it here but now, as adults appreciate this beautiful area, God's Country; the phenomenas that we see every day like sunrises, rainbows, and early morning cloud caps over the lake. We agree that this has got to be

one of the most beautiful places on earth to live.

Bicycles and a Violin Played a Large Part For Seven Friends at 1922 Starkey House Bed & Breakfast Inn.

This is the best Finger Lakes location for bicyclists, just twelve miles north of Watkins Glen along captivating Seneca Lake.

There could not a better spot to call home for a long weekend, than the
1922 Starkey House for seven college friends (SUNY New Paltz circa 1976).

I have not seen a more physically fit, fun-loving group in a long time. They certainly know how to enjoy life.

Their three day visit consisted of bike rides down to the Glenora Falls, the surprise that I mentioned they would find. And, a twelve mile trek down to Watkins to hike the steps at the State Park, and then bike all the way back to Starkey House! They enjoyed jumping in Seneca for a brisk swim at the end of Starkey Point and took in some wineries and restaurants. And, oh yes . . . Barbara practiced her violin (fiddling) preparing for a contra dance concert she would be performing at later in the week, just lovely!

Sometimes when guests make a last minute reservation they might expect sacrifice the good service, great food, amenities and comfort because they are making last minute choices. Not true at 1922 Starkey House B & B. Even though at times it gets very busy in the kitchen and guests come and go, I do my best to bring to my guests what I promise. Consistently paying attention to little details can be difficult for an Innkeeper, as I am learning. However, things have been going okay thus far.

Again, the Veranda Room and Robin's Nest combination proved to be the perfect solution for travel with family or friends at beautiful 1922 Starkey House Bed & Breakfast Inn.

The Miao Family children serenaded me on the piano in the living room of the Starkey House.

It gave me great pleasure to see this lovely family enjoy eating, reading, playing piano, and playing board games throughout their time here at the house. Again, the veranda spaces were utilized to the fullest. I guess they liked it here too.

"We thoroughly enjoyed our stay at 1922 Starkey House. . . Cathy's warm hospitality made it an even more enjoyable stay for our family. . . having grown up in the area, she was able to quickly point us in the right direction for everything we wanted to do. . . the kids are already asking about when we will come back. Early morning chirping birds during breakfast and night time summer lake breezes can be heard and felt, enhancing the ambiance of this serene country setting.

The Miao Family liked the convenient location of Starkey House and took in a some of Watkins Glen State Park as well as visited a few artisan cheese farms. I know I will see them again soon.

Getting Out to Check it Out at Two Goats Brewery by Cathy Moskal, Innkeeper 1922 Starkey House

The lake glistened, the weather was marvelous as my friend Ellie and I set out to explore the east side of Seneca Lake.

After having a great lunch at the Ginny Lee Cafe, we stopped at Hazlitt Winery to taste some really good whites, then went down to see the lake view at the
Two Goat's Brewing located in Hector, NY.

1922 Starkey House has been nicely busy and this was the first chance I have had to get out and tour around for a little bit myself! The brewery is located exactly across the lake from the Starkey House, about a twenty-five minute ride, and I was able to see Starkey Point from the high deck.

Though you can't really see the point here because of the haze, it jets out a bit and can be seen easily on a clear day from Hector. Starkey Point was once named Brewer's Point and owned entirely by C.Raymond Brewer, the original builder and owner of 1922 Starkey House.

Ellie and I liked the darker brews Two Goats had to offer. I will stop back another time to check out the music on their open mike nights.

For now I am back to my preparations for this week's guests.

They took daily excursions around three of the Finger Lakes taking in wine trail events and spots of interest. The Seneca Wine trail was enjoyable for them as they drove up and down both east and west sides. They liked the village of Hammondsport located

at the South end of Keuka Lake.

Gina and Blaine stayed in the Veranda Suite, the largest room at the Starkey House and enjoyed the private upper veranda. They were one of three fun-loving couples that stayed over the Fourth of July weekend.

When they complimented my breakfasts, I really was flattered since they know and love food from all over the world; not to mention that Gina is a fantastic cook herself! Their kind enthusiasm motivated me to continue to develop more freshly prepared foods using locally produced fruits, vegetables, meats and cheeses. Gina and I agreed that there is nothing like fresh herbs plucked from your garden to enhance the flavor of any dish.

Their stay near Seneca Lake proved to be the perfect solution at the Starkey House.

Christine and Tony brought special memories

They really enjoyed everything the house and property had to offer including Mamma Robin and her babies in a nest above the Veranda, the peace and quiet of my country location,

and the easy access to all they wanted to explore.

Tony was an especially good cook by profession, and brought in a delicious Buffalo Chicken Wrap dish that he prepared himself.

This season is kicking off

with a variety of lovely guests and fun-filled stays!

When you are passionate about what you are creating and doing every, day the way that I am with this beautiful house built in 1922, it means so much when guests rave over what you have offered them. I love being "the Hostess with the Most--ess" as the expression goes.

Everyone that stayed at the House this week had a good time and each in a different way. I am so thrilled to see that everyone enjoyed every space, outside and inside to the fullest.

I am catching up on posting the great reviews from guests a few weeks ago. Now that the season has really gotten into full swing, the Inn is super busy. Every guest's stay brings a different experience. I am enjoying everyone! One of the nicest comments I received was from Stephanie and John Campbell.

Catalpa Tree? What is it?

Read this interesting article about a Catalpa Tree in NY City from the NY Times.

Catalpa trees have been loved by many for a long time. Their fragrance fills the air at this time in June as breezes blow off of the lake. I can even smell it inside the house which makes me want to open every window! The house is smiling now, permeated by this giant creature living right in my front yard at 1922 Starkey House Bed & Breakfast Inn.

If you can see that the house is three stories high and the Catalpa, in the middle with blooms, towers over it.

The leaves can be as large as 14 to 16 inches long and 12 inches wide.

It has clusters of flowers that smell so sweet. Each resembles an orchid. Imagine seeing a huge tree loaded with these beautiful blooms! I was so impressed by its beauty that I decided to name a room at 1922 Starkey House the "Catalpa Room." Guests will see it outside the windows of their room when staying here.

Unfortunately, like all blooming plants, shrubs, and trees, the breathtaking event must be seen and appreciated inside the time frame of about one week or so, depending on the weather.

I tried my best to have the Catalpa Room represent the beauty of the tree. The room has beautiful lighting and is the only room quietly located in the Northeast corner of the house.

What a joy it was for me to see Ellen, Margie, and Joanne enjoy staying here and finding some fun things to do in the area. It was Margie's birthday and Ellen arranged with me to have flowers and a basket of chocolates, honey, etc. as a gift for her when they arrived. They thoroughly made themselves at home which made me so happy. Oh yes, and they recommend a night out at Halsey's in Geneva for good food and cocktails.

They stayed in the Veranda Suite and Robin's Nest, adjoining rooms, so that they could spend time close to each other. The two single beds in Robin's Nest provided extra comfort.

I visited the auction along Route 14A between Dundee

and Penn Yan on Memorial Day weekend for the first time.

What a fun thing to do and the plants were beautiful! I was specifically looking for hanging basket varieties and those that are good for window boxed, and borders. There was so much to choose from, I did not know where to look first.

The auctioneers do a great job. I have always loved attending auctions of any type, especially estate auctions that are common here during the summer and fall months. You never know when you will find that one special "treasure." But this plant auction was just beautiful.

There were some beautiful selections of Lupines, one of my favorite perennials.

Since this was a holiday weekend, the place was crowded and visitors came from everywhere.

I did not get how the auctioneers were selling with their very quick, sing-song technique. How DOES anyone talk that fast! But finally, I got the hang of it and became bold enough to hold up my hand to win a bid on these two lovely mature, hanging baskets with Geraniums and Vinca Vine, for $9 each when normally they go for $18 to $20 or more! Not bad for the first time! I will go back as soon as I am able. I have many window boxes yet to fill to beautify my 1922 Starkey House Bed & Breakfast Inn!

There is a certain glow to one of the lovely rooms now available at the 1922 Starkey House. It has been said by everyone who steps in to the room that it is the perfect meditative, relaxing spot. I think it is because of the light exposure being southwest.

I painted it a warm terracotta, earth tone, one of my favorites.
The bed is brass and a lovely antique dresser with tilt mirror sets off the natural woodwork. The Peony View was named that since guests can see my peony garden if they visit during these first two weeks of June.

Peony View is set up as a "bonus" room. It does have a large walk-in closet with an original built-in dresser from 1922, the year the house was built. However, it does not have a private bath but guests traveling with family or friends can share a bath with either the Catalpa Room, or with Sycamore Suite.

The Peonies are in full bloom right now during the first two weeks of June. I have always managed to pick a huge bunch for my daughter Rachael on her birthday. The whites bloom first with their tiny hint of pink centers. This week, the dark pinks are opening. They are so fragrant you can smell them everywhere in the yard!

Spring Allergies? Sting Back at the Pollen that Bit You!! ...with Locally Produced Raw Honey

Even though spring officially starts in March, in my opinion it doesn't really feel like spring until April. Of course, the return of spring usually means the return of spring allergies.

This morning during a chat with some of my mommy friends, I learned about a natural way to prevent and reduce the symptoms of seasonal allergies. We discussed how our allergies seem to be getting worse, and how we are now allergic to things we were never allergic to before, because of changes in our bodies from having children and aging in general. Not only do these allergies cause itchy eyes and respiratory issues, but also some skin conditions like hives and dermatitis.

One of my friends mentioned that she has successfully curbed allergies in her family by consuming local, raw honey. The idea behind this is that local bees pollinate local plants that produce local allergens. Consuming small amounts of honey containing trace amounts of these local allergens helps the body build up a natural immunity to these allergens over time.

This is not a new concept, not only has it been practiced for years by societies around the world who rely on nature for their medicine; but this is also the idea behind allergy shots in the realm of allopathic (“Western”) medicine; administering small doses of a suspected allergen to cause the body to become immune to it.

Can I use any honey?

You can’t just go to the grocery store, pick up a honey bear, and use it to solve your allergy problems. You have to use a raw, local honey. It has to be raw because the pasteurization process used in commercial honeys will destroy many of the beneficial bacteria and other healthful properties naturally contained within the honey. It has to be sourced locally, preferably within 20 miles of your home, because anything further than that will introduce allergens that are not in your immediate environment, which somewhat defeats the purpose.

Some better grocery stores and specialty health food stores like Whole Foods Market and Trader Joe’s sell raw, local honey; but your best bet is to go to your local farmer’s market and see what they have. Even if you live in an urban or suburban area, there is likely a local market that sells products sourced within 20 miles of your home. Check your local yellow pages, online, or ask around.

How do I take it?

The best way is to start eating small amounts of the honey prior to the start of the allergy season, gradually increasing to one teaspoon a day, and continuing throughout the season. Although it is technically already spring, it is still very early, and the cold weather in many parts of the country (March came in like a lion…and went out like one. No lambs in sight.), may have staved off some of the pollen. If you start now, you might benefit from the honey this season.

Can this remedy be used on children?

Honey is generally well tolerated, but any substance should be tested in a very small dose to rule out any adverse reactions prior to regular consumption. However, honey in any form must not be given to babies under one year of age. Although a rare occurrence, it could cause infant botulism.

Does science support this?

As with many tried and true natural and home remedies, there are little to no scientific studies proving the efficacy of honey on allergy prevention and treatment. The reason is because small, local farmers simply do not have room in their budgets for large-scale clinical trials or controlled, double-blind studies like the pharmaceutical companies who manufacture allergy shots and antihistamines do. What they do have, however, is hundreds of years of success stories from real people and real families. If honey was not effective, people would have stopped using it by now.

Raw, local honey has so many wonderful uses. Not only does it provide sweetness to our food in a way that works with the body, but it can also be used to treat minor wounds, clear up problematic skin, and soothe digestive problems, and deliver vitamins, minerals, and antioxidants to the body. Adding allergy prevention and relief to that list makes honey a very powerful and multi-functional gift from nature.

"Kiss My Grits!"...you will when you taste these yummy variations!

That was the common response from the character, Flo

on the 1970's TV sitcom "Alice."

The first time I learned about or tasted grits was when I first moved to the city of New Orleans a number of years ago. While standing in a fast-moving cafeteria line at Tulane University, I became nervous over what to ask for. What was normally one of the easiest tasks in life..to choose a quick breakfast, pay, sit down, and eat, became increasingly intimidating!

The servers grew impatient with me when I stared at the choices and did not know what to say. "Come on hunny...make up your mind. . .you're holdin' up the line...are you a Yankee or somethin?" As they rolled their eyes and coaxed me on in their unique and lovely New Orleans (No Awleens as I learned quickly to pronounce) style, I quickly grabbed sunny-side-up eggs and grits with sausage and toast.

Well, to my amazement and surprise I loved grits with eggs and since then have tried making grits in a few different ways. Grits, made from ground corn, are not only a breakfast staple for many, but can be used with or mixed in with other ingredients to create delicious and interesting lunch or dinner dishes.

I am sure that on the Food Network show, "Chopped" chefs would even find a fantastic way of making it into a dessert! I will most likely include grits as a healthy choice, prepared breakfast-style on the menu here at 1922 Starkey House Bed & Breakfast.

Grits come from grinding corn, or maize, and originated from Southwestern Native American Tribes. The ground corn was passed through screens, with the finer siftings being grit meal, and the coarser being grits. Many communities in the U.S. used a gristmill up until the mid-20th century,

with families bringing their own

corn to be ground, and the miller retaining a portion

of the corn for his fee.

Also known as Hominy, they are similar to American cornmeal or European polenta. Usually, they are cooked using water, salt, then adding milk and butter. They are famous in the Southern parts of the US and just like staple foods in other countries, regions, and cultures, no one else can make them better.

I cooked up some breakfast grits this morning and enjoyed them with just, a little butter on top.

You may also dribble a dash of cream if you want to add extra richness. It is best to cook them a longer time adding milk then water alternately to fluff them. I also love them with "over-easy" eggs so that I can mix them into the yolks, ....yummy!

They should be eaten quickly since they are starchy and will firm up fast.
Actually if you let them firm up, you can wrap them in plastic wrap or form them in a small square pan. Chill for at least an hour. This form can then be sliced or cubed,to be used in other dishes like when cooking with polenta.

I am excited about the New York Culinary Institute and New York Wine Culinary Center located in Canandaigua, New York, about a thirty-five minute drive from 1922 Starkey House Bed & Breakfast. It is still another reason to visit the Finger Lakes Region of upstate New York this season and all year round.

Our Finger Lakes region of upstate New York is blessed with hundreds of waterfalls.

My nephew Mark Moskal is a tour guide in the area and is known as one of the experts on all aspects of fishing, hunting, canoeing, and kayaking. He beautifully documents his experiences on his blog mentioned below.

I have taken a few pictures of one of my favorite waterfalls located in Montour Falls, NY, named by the Native Americans as She-Qua-Ga or "Tumbling Waters." I was able to capture it during sub-freezing temperatures this past Christmas. Following that is a picture of it with a western sun shining through during the summer months last year.

If you visit anywhere near on your trip through you must take an extra hour or so of your time to take in the many larger and smaller waterfalls. Just another free gift from Mother Nature! Who needs to travel the world for world class views when they are right here!

Say Artisan Cheese Please!

There are artisan cheese producers springing up all around the Finger Lakes region! What a perfect idea since there have been dairy, sheep, and goat farms ever since...

What I know about cheese is

that I love it. Pairing cheese with our regional wines and fruits goes so naturally. There is nothing like a plate with a slice of crisp sweet apple, a bunch of grapes, and a thinly sliced hard, aged, sharp cheddar!

I am seeing more and more colorful directional flags going up along the wine trails indicating which farmers have decided to invite the public to partake in the wonderful world of specially crafted fresh and aged cheese. What fun! I can't wait to visit a few. To view a map and calendar of events listed on the Cornell University Cooperative Extension website click on "SAY CHEESE!"

So, even though I love most cheeses and I have sampled those from all over the world, I do not know that much about the actual production. Here in lake and farm country you will find mostly small batch production and you will be able to see the cows, goats, and sheep (those darling creatures) that provide the goods.

I am familiar with aged, hard cheese that I have seen and purchased in Italian markets throughout New Jersey and New York City as well as in France and Italy.

There is nothing like the smells of meats and cheese hanging in those little specialty delicatessens. Provolone, sharp cheddar, and the most delicious Parmigiana-Reggiano or Romano.

When visiting

Poland in 2004, our group took an excursion to the mountains in Zakopane and saw many cheese smoke huts that were found along the roads. Inside we saw men stooped over open fires creating just the right amount of smoke for mostly Oscypek, or sheep's cheese.

This cheese, as with other types of cheese in Poland is molded into shapes or balls before it is smoked. It then has a brownish or orange colored skin and is sold on the streets in the open markets.

Cheese is one of my favorite foods but I do try to look for lower fat varieties these days because of the high fat and cholesterol content of the one's I adore. Cheese is a food that I could write many posts about and as I learn more about our local offerings here in the Finger Lakes region of upstate New York I will blog about them.

Building a Hummingbird Habitat is fun and produces long-lasting results. You will enjoy frequent visits from these marvelous little birds. That's not all. You will find yourself amidst a variety of nature's other birds, bees, and butterflies who will be willing to share part of their lives and journey with you.

Larger birds may dart down to your feeder or flowers to gather their daily nourishment and then jet back to the location of their nests, making it easier for you to spot where they are staying for the season. Hummingbirds, on the other hand, come from mysterious places, it seems. But, because their nests are so tiny, you may not notice one that is in plain view!

I already have planted some perennial blooming plants in my garden that will naturally attract the Hummingbirds found in the Finger Lakes Region of upstate New York. Many plants pollinated by hummingbirds produce flowers in shades of red, orange, and bright pink. These plants may bloom in the shade, partial sun, or very sunny areas. They may be lower to the ground or on vines. Hummers prefer trumpet types flowering shapes that are usually hanging for easy access to their sickle-like bills.

Hummingbirds cannot see the colors that the birds do. Hummingbirds can see wavelengths into the near-ultraviolet. So flowers that are mostly pollinated by Hummingbirds are relatively inconspicuous to most insects, which leaves plenty of nectar for hummers. Hummingbird-pollinated flowers also produce a greater concentration of sugars, sometimes higher than 25% sucrose rather than the fructose flowers that insects gravitate to.

It may take a year or two of your time and some patience to develop a lovely Hummingbird Habitat. However, there will be no more interesting spot in your garden than this special place. If you can manage to locate it right outside of a window you will be able to watch all of God's beautiful creatures just steps away. Perhaps I will create mine near my kitchen window at 1922 Starkey House Bed & Breakfast.

The Interesting Life of a Hummingbird

Hummingbirds are the most intriguing creatures; on flight daily seeking the voluptuous blooms of a summer garden to stay alive. Although their beauty is captivating, they live their lives totally for the sake of survival and do not stay with one mate.

The Ruby-throated Hummingbird is the most common to be seen here in the upstate area of New York. However, other types such as the Calliope and Rufous have also been spotted here, according to some sources.

It is very interesting to know that hummingbirds only exist on the North American and South American Continents and their migration patterns cover thousands of miles.

How long do hummingbirds live?

Most hummingbirds die their first year, but when they've survived a full annual cycle, their life expectancy goes up dramatically. The record age of a banded ruby-throated hummingbird is 6 years, 11 months. The record age of a banded rufous hummingbird is 8 years 1 month.

How do female hummingbirds select a mate?

Male hummingbirds, along with many other animals, have what is known as a territory. A territory is simply an area that a male occupies and chases other males away from. A female hummingbird will visit a male's territory, at which time the male performs a courtship display to try to convince the female that he is the best male around. If she likes his display, she will mate with him. If not, she moves on to another territory.

Do hummingbirds mate for life?

No. They don't even stay together to raise the babies. The female does ALL the nest building, incubating, and caring for the babies herself, and a male hummer will mate with any females that he can attract to his territory. These are NOT romantic birds.

What is a hummingbird nest like?

It is not much bigger than a ping pong ball. The female makes the nest with tiny bits of leafy material including little lichens, and weaves it together with spider silk. She builds the nest on a branch in a tree. A hummer will not use a birdhouse.

What are hummingbird eggs like?

Each egg is the size of a jelly bean, and is white. There are two eggs in a clutch.
How long does it take for hummingbird eggs to hatch?

Ruby-throats incubate for 11 - 16 days until the eggs hatch. Rufous hummers incubate for 15 - 17 days.

How much do newly-hatched hummingbirds weigh?

Ruby-throats weigh 0.62 grams when they hatch. This means 3 just hatched hummers would weigh less than one American dime.

What do Hummers feed their nestlings?

When the chicks hatch, they need protein, not sugar, to grow. So mother hummer spends most of her time catching small insects and spiders for them.

When do young hummingbirds learn to fly?

Rufous and ruby-throated hummingbirds both begin to fly when about 21 days old.

1922 Starkey House Bed & Breakfast
It is very cold and windy here at 1922 Starkey House Bed & Breakfast.

My wild imagination is allowing me to look around the grounds, now covered with snow and ice, to go to the place called my Hummingbird Habitat. Just a few simple steps will create the necessary plantings and environment to invite those cute little creatures to find nectar and show off their intriguing beauty. I think my guests will delight in the opportunity to walk around the gardens and sit to take in the fragrances, sights, and sounds.

I have put out hummingbird feeders before. I have tried the store varieties with ready made sugary mixtures and have explored the idea of offering them a homemade variety of food source. But I never really planted specific flowers or bushes that would attract them. So, I have taken some time to investigate what the steps would be that are necessary to create an actual garden that is specifically dedicated to hummingbirds.

Whenever a hummingbird buzzes by, I wonder if they are really birds or some sort of beautiful bug. Their nests are so tiny and their eggs so precious and small. I have learned that, although they are tiny, they survive quite well in their environment and their migration patterns are remarkable.

Hummingbirds, like bees, and butterflies are attracted to flowers that contain nectar. While bees bring the pollen and nectar back to their hives in order to manufacture it into honey, Hummingbirds and butterflies use the nectar for food. Hummingbirds are a "specialized nectavore" that must eat the juicy, sweet nectar from blossoms containing at least 10% sugar content. They reject other types of flower blooms that do not contain higher concentrations of sucrose. So much for low-sugar diets!

The Work In Progress at 1922 Starkey House Bed & Breakfast

I was not sure whether to paint the stucco on the exterior of the house since it was an original style process that was used to create it back in 1922.
But after so many years of weathering, the stucco was coming loose and the color became a very dark (asphalt-looking) gray.

So, the decision was made to hire a professional group to repair, prime, spray and brush paint the house. Since the architecture is that of a Mission-style from the Arts and Crafts Period, about 1900 to 1928, or so, I had to be careful to try and stay with what would have been original choices of color. The terracotta is an earthy tone that looks especially beautiful when the trees are in full foliage but, surprisingly it looks wonderful against a snowy backdrop.

I thought you might be interested in the progression of the painting job from last summer as I get closer to this year's opening. It is a large house and spraying properly is not fun. But the crew of Michael Madigan from Penn Yan did a great job. Thanks boys! Oh yes, it seemed as though they were all named Jim so I had to name them Jimmy 1, 2, and 3 since they would not know to whom I was speaking if they were all working that day. Very funny!

The person who did most of the nasty spraying work was Jimmy One, which was his requested name being the hardest worker...never missed a day! Thanks! There are some nice pictures of the guys doing what they do best. Remember, it was one of the hottest summers we've had with the temperatures in the high 90's daily for the duration of the job. They were always thoughtful and courteous, and got the job done.

Although snow is falling it will just be another month or so when buds on trees and the tops of crocus will begin to appear at 1922 Starkey House Bed & Breakfast.

I am so happy with the paint job and colors done last summer. The curb appeal is lovely and the double wrap two story verandas are more than inviting! I am already seeing flower boxes hanging from windows and tulips out in the garden. What a thrill to know that soon I will be welcoming guests.

After putting final finishes on some inside construction my hopes are raised for mid to late April as a goal for guests to begin enjoying the comfort and beauty the house has to offer. As I am perfecting a few special breakfast specialties, bathroom addition plans are coming to fruition and I can't wait to see this year's project done! an ideal place for summer barbecues.

Guests will enjoy the porches from the upstairs bedrooms and have breakfast,

read a book, or take in lake breezes on the lower porches.

from the train station at Starkey Corners. Now, the grounds around
are large enough for guests to bring their small motor boats,
sailboats, canoes, or kayaks. There is a NY State Boat launch just up the road
on Seneca Lake.

How to Grow and Keep a Blueberry: Part III of a Three Part Series About Blueberries

Blueberries are plentiful in the Finger Lakes Region of upstate New York and according to the eHow website, it seems that my clay-like and acidic soil is stellar for growing these "fruits of the earth" at 1922 Starkey House Bed & Breakfast. Trouble is, I am not always the patient sort and all my sources are saying that I will have to wait at least two to three years before the little blue gems begin to make an edible appearance.

Time can fly quickly when you are having fun though, and I know I will be pretty busy making my guests very happy with their stay as it is. So, I will plant a bunch and let nature take its course while I concentrate on the other many jobs of an innkeeper/owner. I have been referred to as "Wonder Woman" before so now we will see if that is true.

When exploring how to grow Blueberries I found that the best resources are the university agricultural sites, such as the local Cornell Cooperative Extension. Here, you will find the most comprehensive information about growing Blueberries and just about anything else. There are also numerous scholarly links to go to for any research studies about growing, preserving, and eating all types of fruits, vegetables, and grains grown in a specific region. The Cornell Extension is a valuable resource in these areas. Each state and university usually has some sort of website or other publication like this one.

I also found a few private blogs and websites loaded with great information and, best part of all . . . recipes!

Here is one of the best recipes for muffins (I will use this one at Starkey House) that I have found. I do not care for muffins that have a starchy, cakey-like texture and the kind that leave a packaged mix after taste. . .if you know what I mean. This recipe combines whole oats that are healthy and delicious. The moisture from the berry gives a delicious tenderness that cannot be matched. Just love them!

Blueberry Oat Muffins

1 cup old fashioned oats, uncooked

1 cup low fat buttermilk
2 egg whites, lightly beaten
2 Tablespoons butter, melted
1/2 teaspoon grated lemon peel
1 cup flour
3 Tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup blueberries (fresh or frozen)

Preheat oven to 400 degrees. Lightly spray 12 muffin cups with cooking spray.

Mix oats and buttermilk in a medium bowl. Let stand 10 minutes.

Add egg whites, butter and lemon peel, mixing until well blended.

Combine flour, sugar, baking powder, baking soda and salt in a large bowl and mix well.

Stir in dry mixture, just until moistened.

Gently fold in blueberries.

Fill muffin cups nearly full. Bake 20-25 minutes or until golden brown. Cool muffins in tins on a wire rack. After 5 minutes remove from pan. Serve warm.

Yield: 12 muffins

I found that freezing and storing Blueberries is quite simple, you just have to be careful to be sure that none are moldy or wet, as with any other fruit. If you place the Blueberries on a cookie sheet and freeze them separately, you can then transfer them to a freezer bag and they should not stick together while keeping. You can do this with any fruit. I suggested this to my cousin Judy so that she could freeze black cherries to have all year long as a natural medicinal to aid in lessening the inflammation caused by arthritis.

I suggest that you go to the above-mentioned university resources to learn about canning Blueberries or making them into preserves. It is great to keep jams and jellies on the shelf so that they are available at any time, don't you agree?
